We talk about casino math quite a bit here and I continually recommend Dr. Robert Hannum's Practical Casino Math book (expensive) for those who are serious about it. Here's a link to a paper by Dr. Hannum. It'll give you an idea as to his wirting style as well as some specific math examples from the casino.
